The perceived sustainability of food plays a significant role in young consumers' eating behaviors. While it is highly relevant to investigate these perceptions, the available measures are limited. Previous research has mostly relied on single-item measurements that only allow surface-level understanding perceptions. Therefore, this aims provide researchers with scale measure perceptions environmental sustainability, addressing need for such measurement tool. We used mixed-methods approach develop and validate Perceived Environmental Sustainability (PENSUS) Scale Food Drinks. Population aging is a global phenomenon with significant social and economic implications, making healthy eating crucial for maintaining physical mental health. This study investigates the factors influencing food choices of sample 334 Italian older adults by considering cognitive, informative emotional into established theoretical frameworks. Regression analysis fuzzy clustering were employed to understand antecedents identify distinct sub-groups adults. Three clusters identified. Purpose While few studies have examined the impact of nutrition literacy (NL) on sustainable dietary behaviors, this study aims to explore role adults’ NL in and healthy eating behaviors (SHEB) their adherence Mediterranean diet. Design/methodology/approach This cross-sectional was conducted between April 2023 January 2024 at Ondokuz Mayıs University Samsun, Türkiye, involving 277 students personnel (54.9% women; age range: 19–56 years). Participants completed Evaluation Instrument Nutrition Literacy Adults (EINLA), Sustainable Healthy Eating Behaviors Scale (SHEBS) Diet Adherence Screener (MEDAS). Findings Linear regression analyses revealed that a one-unit increase reading comprehension interpretation component EINLA scale associated with 4.458-unit ( p = 0.022) SHEBS score. Additionally, positively SHEBS, each additional year linked 0.977-unit < 0.001). whose income equal or higher than expenditure had significantly scores compared those lower 0.002). However, no significant association observed MEDAS scores. Originality/value contributes literature by demonstrating play critical promoting SHEB among university personnel. it highlights influence financial stability individuals’ ability adopt behaviors.

In the context of escalating environmental concerns and imperative for sustainable consumption, this study meticulously examines variations in food literacy propensity to purchase green among Chinese consumers across three generational cohorts: baby boomers, generation X, Y. Utilizing theory planned behavior (TPB) as a conceptual framework, employing SPSS structural equation modeling (SEM) rigorous data analysis, research elucidates influence attributes on consumption patterns. The study’s importance is marked by its unique contributions: it identifies intergenerational discrepancies furnishes empirical support enhancement all consumer demographics. Furthermore, constructs an innovative model that integrates traits, establishing theoretical scaffold advancing consumers’ literacy. This comprehensive synthesizes determinants variations, literacy, intention consume food. Findings from demographically stratified sample 720 participants, with equal representation each cohort gender (240 participants per cohort), highlight distinct profiles purchasing intentions.
