Mycotoxins in cereals such as corn (Zea mays) threaten the consumer's health even low concentrations due to their high consumption. This study aimed detect concentration of aflatoxins (AFT) and Ochratoxin A (OTA) imported samples probabilistic human risk assessment. Surface Enhanced Raman Spectroscopy (SERS) greatly increases signal intensity for aflatoxin B1 allowing detection of parts per billion (ppb) concentrations without sample preparation. This enhancement enables and quantification in real-time laborious preparation consuming hazardous chemical solvents extraction. Aflatoxins are produced by certain fungi that grow on many agricultural commodities, including corn, nuts, wheat, barley, other species.
