The complexity of companies in the restaurant industry is clear, and various techniques can be used to make decisions. analysis performance optimization menus are considered important, which why several approaches used. objective this study achieve financial sustainability through menu identifying strategies improve profitability. A qualitative methodology a dual case was adopted by comparing within hotel street restaurant. results show that for owners managers, these useful, simple, pertinent measuring consequently improving results. originality research lies fact three models were applied simultaneously, allowing an in-depth profitability being analyzed. This identified most profitable items each needed changed contribute more restaurant’s menu, resulting practical implications. Through theoretical implications, corrects limited knowledge about creating starting point spreading society. In conclusion, one first bridge gap between theory practice, taking assess performances, useful restaurants promote sustainability.
