ABSTRACT The food application of natural blue colorants such as acylated anthocyanin is becoming increasingly popular due to their safety, nutritional value, organoleptic attributes, and more pH/thermo‐stable properties compared nonacylated anthocyanins. However, it a great challenge obtain enough anthocyanins meet market demand, rather than readily available in nature from edible fruits vegetables. In this review, the crops, efficient eco‐friendly extraction food‐grade anthocyanins, potential intelligent packaging are extensively summarized. Anthocyanin, a unique natural polyphenol, is abundant in plants and widely utilized biomedicine, cosmetics, the food industry due to its excellent antioxidant, anticancer, antiaging, antimicrobial, anti-inflammatory properties. However, degradation of anthocyanin an extreme environment, such as alkali pH, high temperatures, metal ions, limits physiochemical stabilities bioavailabilities. Encapsulation combining with biomaterials could efficiently stabilize for protection. The instability of anthocyanins significantly reduces their bioavailability as food nutrients. This proof-of-concept study aimed to develop efficient carriers for overcome this challenge. Characterization the hydrogels via SEM (scanning electron microscope) and rheological analysis revealed formation typical gel structures. MTT (methyl thiazolyl tetrazolium) hemolysis assays confirmed that high biocompatibility. Encapsulation efficiency fluorescence microscopy images demonstrated successful encapsulation by pH-responsive hydrogels. Stability studies further validated effect peptide in helping anthocyanin molecules withstand factors such gastric acid, temperatures, heavy metals. Subsequently, responsive simulated (intestinal) fluid could protect from acid while achieving rapid complete release intestinal environments.
