Anthocyanin, a unique natural polyphenol, is abundant in plants and widely utilized biomedicine, cosmetics, the food industry due to its excellent antioxidant, anticancer, antiaging, antimicrobial, anti-inflammatory properties. However, degradation of anthocyanin an extreme environment, such as alkali pH, high temperatures, metal ions, limits physiochemical stabilities bioavailabilities. Encapsulation combining with biomaterials could efficiently stabilize for protection.
