Food

diseases
in
the
United
States
leads
to

spoilage,

worldwide.
In
addition,
conventional
preservation
treatments
implemented

nutritional

quality.
Therefore,
there
is
a
need
for
new
alternatives
counteract
without
altering
its
characteristics.
Endolysins
are
promising
strategy
due
their
unique
properties,
such
as
host
specificity,
synergism
with
other
antibacterial
agents,
mode
action,
low
probability
resistance
development.
These
characteristics
differentiate
them
from
agents
used
industry.

Effects of Fucoidan on the Inhibition of Biofilm Formation of Salmonella enterica Subsp. enterica Serovar Typhimurium on Seafoods and Its Molecular Antibiofilm Mechanisms

Foodborne
illnesses,
particularly
those
caused
by
Salmonella
enterica
subsp.
Serovar
Typhimurium,
present
a
significant
challenge
to
public
health,
especially
within
the
seafood
industry
due
biofilm
formation
on
foods.
This
study
investigated
antibiofilm
potential
of
fucoidan,
sulfated
polysaccharide,
against
Typhimurium
crab
and
shrimp
surfaces.
Fucoidan’s
minimum
inhibitory
concentration
(MIC)
was
determined
be
150
µg/mL.
Sub-MIC
(1/8,
1/4,
1/2,
MIC)
were
evaluated
for
their
impact
inhibition
formation.
Fucoidan
treatment
resulted
in
significant,
dose-dependent
formation,
achieving
2.61
log
CFU/cm2
2.45
reductions
surfaces,
respectively.
FE-SEM
analysis
confirmed
disruption
cell
membrane
damage.
Real-time
PCR
showed
downregulation
quorum-sensing
(luxS)
virulence
(rpoS,
avrA,
hilA)
genes.
These
results
propose
that
fucoidan
has
ability
as
natural
antibacterial
agent
controlling
biofilms
processing,
thereby
enhancing
food
safety
minimizing
contamination.

Contaminated

diarrhea

study
aimed
to
assess
the
phenotypic
genotypic
characteristics
of
virulence
antibiotic
resistance
genes
STEC
strains
isolated
from
various
types
ice
cream
fruit
juice
sold
Isfahan,
Iran.

March
2023
2024,
500
samples-including
traditional
(100),
industrial
frozen
(100)-were
collected.
Samples
were
analyzed
using
biochemical
molecular
methods
for
detection.
Antibiotic
sensitivity
was
evaluated
