The purpose of this study was to clarify the role saturated fats from cocoa butter (plant source) compared with lard (animal on alcoholic liver damage in rats. Male Wistar rats were fed either a control diet (C) or an ethanol (E), and dietary (corn oil, olive safflower oil) these two diets further replaced by (CL, EL) (CC, EC). Acute alcoholic liver injury is an important health problem worldwide. Apples are rich in many nutrients and have a variety of biological activities, including antioxidant, anti-inflammatory, anti-tumor, therefore the potential to be natural protective agent against acute injury. This study evaluated effect apples (Malus pumila Mill) on rats. Male Wistar rats were randomly assigned four groups: control group (C), that was fed fresh (CA), ethanol-treated (E), (EA). Rats treated with continuous forced gavage 40° ethanol (4 mL/kg) for one week simulate human alcoholism. Liver assessed based changes serum levels alanine aminotransferase (ALT) aspartate (AST), as well histological analysis. The terms alcohol metabolism, oxidative stress, inflammation, lipid synthesis, tissue fibrosis. results showed apple consumption protected injury, indicated by decreased ALT AST levels, reduced peroxidation, improved histopathology. Moreover, increased antioxidant enzyme activity inflammatory cytokine liver. These findings suggest may ethanol-induced rats, possibly through its anti-inflammatory properties.
