Protein-rich agro-industrial waste streams are high in organic load and represent a major environmental problem. Anaerobic digestion is an established technology to treat these streams; however, retardation of protein degradation frequently observed when carbohydrates present. This study investigated the mechanism by manipulating carbon source fed complex anaerobic microbiota linking reactor performance variation microbial community. Two acidification reactors were first acclimated either casein (CAS reactor) or lactose (LAC reactor), then with mixtures lactose. Results showed that was present, community shifted from mainly Chloroflexi Proteobacteria Firmicutes, degree deamination CAS decreased 77 15%, VFA production 75 34% effluent COD. A decrease 75% protease activity 90% also observed.
