In recent years, there has been growing interest in bioactive plant compounds for their beneficial effects on health and potential reducing the risk of developing certain diseases such as cancer, cardiovascular diseases, neurodegenerative disorders. The extraction techniques conventionally used to obtain these phytocompounds, however, due use toxic solvents high temperatures, tend be supplanted by innovative unconventional techniques, line with demand environmental economic sustainability new chemical processes. Among non-thermal technologies, cold plasma (CP), which successfully some years food industry a treatment improve shelf life, seems one most promising solutions green CP is characterized its low impact, cost, better yield phytochemicals, saving time, energy, compared other classical light considerations, this review aims provide an overview critical issues related particularly polyphenols essential oils.
