Abstract Preservation of perishable fruits and vegetables through edible coatings having functional roles, has gained importance now a days. The present study was designed to investigate the effect water chestnut powder-based on quality shelf life apples (Kala kullu). Two treatments, T 1 2 , were developed by utilizing two different concentrations heated powder (2% 2.5%, respectively). Whereas, 2% guar gum (T 0+ ) accustomed as positive control, uncoated negative control 0− ). This study aimed to evaluate the applicational possibilities of enzymatically modified apple pomace (AP) in conjunction with probiotics as value-added ingredients for production jelly candies. AP was Pectinex® Ultra Tropical, Viscozyme® L, and Celluclast® 1.5 L (Novozyme A/S, Bagsværd, Denmark), soluble insoluble dietary fibre content determined using Megazyme kit (Megazyme International Ireland Ltd., Wicklow, Ireland), reducing sugar 3,5-dinitrosalicylic acid assay. This study was aimed at optimizing the extraction process of phenolic compounds, particularly antioxidants and antimicrobial agents, from apple pomace using subcritical water method. The Box–Behnken experimental design utilized to ascertain optimal conditions, focusing on maximizing yield, compound content, antioxidant activity. Three independent variables were investigated: temperature (120°C, 140°C, 160°C), time (20, 30, 40 min), water‐to‐apple ratio (1:20, 1:40, 1:60 g/mL). optimized yielded a significantly higher efficiency (18.05%), total content (1341.11 mg/100 g), 2,2‐diphenyl‐1‐picrylhydrazyl (DPPH) scavenging capacity (92.39%) compared conventional maceration results aligned well with predicted values obtained model. properties extract assessed against Staphylococcus aureus , Escherichia coli Aspergillus niger through serial dilution concentration 30 mL exhibited superior antifungal antibacterial potassium sorbate (10 mL). research demonstrates potential as sustainable efficient method for extracting compounds pomace, offering promising alternative methods contributing valorization agricultural waste.

Apple leaves are a rich source of bioactive compounds such as phenolics, flavonoids, and essential minerals, which exhibit significant antioxidant therapeutic properties. This study focuses on comparing the biochemical composition, capacity, mineral contents Malus domestica Borkh. cultivars M. kirghisorum Al. Fed. & genotypes. The goal is to identify potential health-promoting establish basis for utilizing apple sustainable resource in food, pharmaceutical, cosmetic industries. revealed nutritional variation among Total capacity ranged from 36.00 'A12' 59.50% 'Starking Delicious'. phenolic content varied between 70.42 'A28' 147.45 mg GAE/100 g 'Granny Smith', while total flavonoid 15.43 38.66 QE/100 'A16', demonstrating considerable variability compound composition. Correlation matrix analysis identified several relationships. phenolics flavonoids showed positive correlation (r = 0.52**), calcium strongly correlated with magnesium 0.79**), potassium phosphorus underscoring their physiological interconnections.
