The incorporation of polyphenols into food systems provides various health benefits, yet their stability and bioactivity are often compromised by processing conditions. In this study, we advanced the pH-driven method for highly pH-sensitive polyphenols, such as quercetin, optimizing operating conditions, including minimizing oxygen exposure reducing times. As a result, an improved post-pH-driven (PPD) was developed to encapsulate quercetin nanoemulsions with encapsulation efficiency exceeding 95%, indicating that could be broadly applicable incorporating polyphenols. For example, it has been successfully applied upcycle plant from peanut skin nanoemulsions, serving representative model. PPD demonstrated superior performance compared conventional water-based method, achieving 1.8 times higher remaining percentage total polyphenolic content. Additionally, PPD-based exhibited significantly enhanced antioxidant properties, DPPH ABTS radical scavenging activities increasing 3.7 2.8 times, respectively, method. These findings underscore potential versatile efficient approach developing polyphenol-powered foods upcycling byproducts improving efficiency.

In Romanian ethnopharmacology, Eupatorium cannabinum species is known for its remarkable biological activity. We present an advanced approach to encapsulation using maltodextrin matrices enhance the stability and efficacy of phytoconstituents nanoparticles. Two distinct carrier systems were developed: (i) a direct micro-spray E. in produce maltodextrin-encapsulated (MEC), (ii) two-step process involving preparation new phytocarrier system based on gold nanoparticles (EC-AuNPs), followed by create AuNPs (MEC-AuNPs system). Comprehensive chemical profiling GC–MS ESI–QTOF–MS revealed 80 bioactive molecules, including terpenoids, alkaloids, flavonoids, phytoecdysteroids. Morpho-structural (XRD, FTIR, Raman spectroscopy, SEM) thermal analyses confirmed successful integration NPs within matrices. EC-AuNPs MEC-AuNPs exhibited superior antioxidant activity, significant antimicrobial against major bacterial pathogens (S. aureus, B. subtilis, cereus, P. aeruginosa, S. typhi, coli), enhanced cytotoxicity MCF-7 HT-29 cancer cell lines. This study highlights potential combining with develop multifunctional therapeutic systems. The findings underscore importance phytoconstituent stabilization nanotechnology addressing global resistance advancing innovative medical applications.
