The detection and quantification of mycotoxins in beer are critical for ensuring consumer safety regulatory compliance. These contaminants, originating from barley other grains, persist potentially transform during the brewing process. This study presents an innovative analytical protocol using liquid chromatography/electrospray ionization tandem mass spectrometry (HPLC/ESI-MS/MS) simultaneous qualitative quantitative analysis nine mycotoxins, including aflatoxins (AFB1, AFB2, AFG1, AFG2), Ochratoxin A (OTA), Fumonisins (FB1, FB2), Deoxynivalenol (DON), HT-2. method leverages efficiency multi-mycotoxin immunoaffinity columns, providing streamlined sample preparation with high specificity sensitivity. Validation was conducted craft beers Calabria, freeze-dried samples to enhance consistency stability. method's accuracy confirmed by spiking at concentrations compliant European Commission's regulations (Recommendation 2024/1038/EU). developed delivers reliable results minimized resource consumption, offering a robust tool quality control assessments brewing. By addressing knowledge gaps beer, this contributes advancing food standards industry.

Background: Mycotoxins, which are secondary metabolites produced by fungi, prevalent in animal feed and pose a serious risk to the healthy growth of livestock poultry. Methods: This review aims conclude current knowledge on detrimental effects mycotoxins health demonstrate potential plant extracts as means counteract mycotoxin toxicity feed. A systematic literature was conducted identify studies impact poultry health, well research into use additives mitigate effects. Studies were selected based their relevance topic, data extracted regarding mechanisms action efficacy extracts. Results: Excessive can lead reduced appetite, impaired digestion, general issues animals, resulting decreased food intake, slowed weight gain, instances acute poisoning. Plant with antioxidant, anti-inflammatory, anti-mutagenic properties have shown improve production efficiency reduce toxic mycotoxins. Conclusion: comprehensive not only consolidates well-documented adverse but also introduces novel perspective highlighting promising natural solution toxicity.

Abstract Most of the agricultural products can potentially be exposed to mycotoxins—especially ochratoxin A (OTA)—, which may cause foodborne diseases such as renal toxicity and notable economic losses worldwide. Biological detoxification is most promising method control OTA contamination. To provide a comprehensive understanding, this review summarizes biodegradation pathways discusses microbes capable degrading their strategies. detailed analysis useful enzymes for food feed will reported, highlighting specific enzymatic strategies identified in scientific literature. comparative functional capabilities different hydrolases demonstrates significant variation degradation efficiency, thus optimization these essential development effective This underscores potential harnessing microorganisms mitigating toxic effects contaminated environment examining requirements that must met successful application enzyme technology promoting public health safety.
