Avocado peel, with a high proportion of bioactive compounds, is usually discarded as waste. Preliminary study was carried out to determine the most suitable solvent (out acetones, water, ethanol and methanol) for extraction antioxidants from avocado peel. Free radical scavenging activity (DPPH), Ferric reducing antioxidant (FRAP) total phenolic content (TPC) were evaluated responses. The oxidative stability cooked ground beef, fish, oil samples (soybean, palm, groundnut) treated optimum concentration peel extract (APE) over time using standard procedures. Although methanol had significantly higher (p<0.05) TPC FRAP, it not different (p>0.05) in DPPH ethanol; hence selected based on its known low-toxicity. Results indicated that process variables with. Moringa oleifera tree is recognised for its high content of bioactive compounds. This work explored the potential incorporating leaves or respective extracts into white chocolate to enhance biological and sensory properties as lacks beneficial compounds found in cocoa. In this study, a phenolic-rich extract was obtained from leaf powder, phenolic composition were characterised. The displayed good antioxidant capacity, especially against ABTS radical (IC50 = 162.0 mg/L). Additionally, it exhibited strong inhibitory α-amylase β-glucosidase, achieving average inhibition rates 79.9% 98.0%, respectively. main identified included catechin (0.211 mgcompound/gextract), caffeic acid (0.056 quercetin (0.031 mgcompound/gextract). Avocado (Persea americana Mill.) is a tropical fruit grown in different areas of the world. pulp interest to food companies while seed and peel are wasted. In 2021, about 25 thousand tons avocado were produced as waste. accordance with circular economy green chemistry principles, could be considered source bioactive molecules, specifically phenolic compounds, recovered using methods. Deep eutectic solvents (DESs) whose extractive efficiency for compounds from waste products agri-food chain has already been demonstrated. this work, an ultrasound-assisted solid-liquid extraction, DESs, was developed recover (Hass variety) peel. Moringa oleifera, which is rich in bioactive compounds, has numerous biological activities and a powerful source of antioxidants nutrients. Cereal-based products, which are rich in carbohydrates, widely consumed worldwide; however, this type of food lacks other nutrients. Phenolic compounds from natural sources, such as Moringa oleifera, can be incorporated into these products to increase their nutritional and biological value. In study, a phenolic-rich extract was obtained M. oleifera leaf powder using Soxhlet extractor. The presented total phenolic content 79.0 mg gallic acid equivalents/g the ABTS DPPH assays showed that act an anti-oxidant agent, with IC50 values 205.2 mg/L 636.0 mg/L, respectively. Afterwards, fresh pasta produced improve its properties extend shelf-life. results demonstrated addition increased capacity did not interfere cooking product.
