Resistant starch (RS) refers to varieties that resist digestion by human digestive enzymes. Owing its distinctive physicochemical attributes and functional capabilities, RS has gained a wide range of applications as dietary fiber prebiotic. In terms structure functions, can be categorized into five distinct types: RS1 through RS5. These types offer benefits, contributing improved colonic health, the modulation microbial communities, reduction in gallstone formation, enhancement mineral absorption, alterations fat oxidation potential. From technical standpoint, manufactured an array physical, enzymatic, chemical modifications. This paper presents comprehensive review existing literature, summarizing classification, structural features, raw material origins, preparation methodologies, functionalities RS. Furthermore, new production technologies RS, such 3D printing, provide valuable insights.

Numerous reports have indicated that the type 3 resistant starch (RS3) derived from Canna edulis can regulate lipid metabolism. However, it remains unclear whether 5 (RS5) exhibits similar effects. In this study, RS5 was prepared native and lauric acid through a hydrothermal method for first time, its nutritional intervention effects on hyperlipidemia in mice were investigated. The (Ce-RS5) using exhibited high compound index content, along with decreased swelling power enhanced granule stability. crystallinity of Ce-RS5 decreased, crystal structure displayed B+V pattern. Microscopically, surface appeared rough deepened grooves, granules loose. Feeding 1.5 g/kg significantly reduced their body weight, positively regulated blood levels, improved liver damage fat accumulation. Additionally, promoted abundance beneficial gut bacteria, such as norank_f_Muribaculaceae, inhibited harmful bacteria like Colidextribacter. This study provides evidence hypolipidemic weight loss mice.

Introduction Resistant starch (RS) has garnered attention for its health benefits, including modulating the gut microbiota and promoting production of short-chain fatty acids (SCFAs). Methods This study investigates structural changes type 3 resistant from Canna edulis (CE) during in vitro simulated digestion explores health-relevant properties using healthy individuals’ fecal microbiota. Results CE, prepared with a RS content 59.38%, underwent comprehensive analysis employing X-ray diffraction (XRD), fourier-transform infrared spectroscopy (FTIR), scanning electron microscopy (SEM). During digestion, XRD demonstrated significant rise CE’s relative crystallinity 38.92 to 49.34%. SEM illustrated transition CE smooth rough surface, notable morphological shift. Post-digestion, was introduced into microbial fermentation. Notably, propionic acid valeric levels significantly increased compared control group. Furthere more, beneficial Bifidobacterium proliferated while pathogenic Escherichia-Shigella suppressed. When comparing well-known functional food fructo-oligosaccharide (FOS), showed specific ability support growth stimulate (SCFAs) without causing lactic accumulation. Discussion demonstrates potential as food, implications enhancement SCFAs production.
