As a result of the increasing focus on alternative protein sources which are ideally still sustainable, yellow mealworm, Tenebrio molitor, has come into focus. To verify its suitability as food source in relation to human health, an analysis microbiome larvae T. molitor is pertinent. Tenebrio molitor (TM) larvae, due to their high nutritional value, are gaining growing attention in food and feed sectors. Although few studies dealt with wheat-based products functionalized TM larvae powder, there is a lack of comprehensive characterization the raw materials optimize formulations for end-product recommendation. This study aimed at investigating effects partial replacement durum wheat semolina increasing amounts powder (5–30%) on techno-functional properties binary blends.
