Tomatoes are consumed worldwide as fresh vegetables because of their high contents essential nutrients and antioxidant-rich phytochemicals. contain minerals, vitamins, proteins, amino acids (leucine, threonine, valine, histidine, lysine, arginine), monounsaturated fatty (linoleic linolenic acids), carotenoids (lycopene β-carotenoids) phytosterols (β-sitosterol, campesterol stigmasterol). Lycopene is the main dietary carotenoid in tomato tomato-based food products lycopene consumption by humans has been reported to protect against cancer, cardiovascular diseases, cognitive function osteoporosis. Among phenolic compounds present tomato, quercetin, kaempferol, naringenin, caffeic acid lutein most common. Many these have antioxidant activities effective protecting human body various oxidative stress-related diseases.
