Lycopene is the main dietary carotenoid in tomato tomato-based food products lycopene consumption by humans has been reported to protect against cancer, cardiovascular diseases, cognitive function osteoporosis. Among phenolic compounds present tomato, quercetin, kaempferol, naringenin, caffeic acid lutein most common.
