Due to global warming and the effects associated with it, wine industry is facing important challenges during winemaking process production of high-quality wines. In this study, mistelas naturally sweet wines were produced ‘Pedro Ximénez’ grapevine cultivar, overripened by sun drying fermented without presence grape skins. Some oenological parameters related alcoholic fermentation low-molecular-weight polyphenols furans considered. Naturally skins showed a higher value viable biomass than those absence. However, in terms density ethanol production, absence presented lower values, respectively, other elaborations. Nowadays, the wine industry is increasingly compelled to provide environmentally friendly products, driven by growing awareness among consumers and governments. Therefore, relying on Life Cycle Assessment methodology, this paper investigates whether consumer interest in organic products compared conventional ones aligns with demonstrable improvements environmental impact, as well assess impact of specific circular economy practices innovations sector for closing resource loops reducing impact. In viticulture, the risk of spring frost is mainly due to earlier budbreak, increasing vulnerability buds and green organs freezing temperatures. Active Spring Frost Protection Methods (ASFPMs) aim mitigate this by temperature in bud area. ASFPMs are often seen as highly labour-intensive resource consuming practices. ASFPM technologies diverse influenced different external drivers, affecting differently their application strategies required equipment for efficiency.
