Many natural products (NPs) exhibit strong antioxidant activity, making them valuable for various applications. In this context, the emergence of deep eutectic solvents (DESs) is expected to help address growing demand innovative, efficient, and more sustainable methods NPs extraction. DESs are designer that provide higher yields enhance activity extracted phytochemicals compared with conventional volatile organic solvents. Antioxidant naturally occurring molecules can also form DESs, either as hydrogen bond donors (HBD) or acceptors (HBA), creating DES (NADES) inherent activity. Natural pigments, or natural colorants, are frequently utilized in the food industry due to their diverse functional and nutritional attributes. Beyond color properties, these pigments possess several biological activities, including antioxidant, anti-inflammatory, anticancer, antibacterial, neuroprotective effects, as well benefits for eye health. Herbs and agro-food wastes are rich sources of bioactive compounds vital for organisms valuable many fields industry. Therefore, in this study, green deep eutectic solvents (DESs) such as choline chloride/citric acid (ChCl:CitA), glucose/citric (Gu:CitA), glucose/urea (Gu:U), betaine/citric (B:CitA), betaine/urea (B:U) at a molar ratio 1:1 ultrasound-assisted extraction (UAE) antioxidants from four herbs (chamomile—Cha, lemon balm—LB, mint—M, nettle—N) two (buckwheat husk—BH chokeberry pomace—ChoP) were proposed. The antioxidant capacity (AC) the obtained extracts was evaluated utilizing three assays: cupric reducing (CUPRAC = 0.0–429.9 μmol Trolox (TE)/g); 2,2′-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS 0.0–146.5 TE/g); 2,2-diphenyl-1-picrylhydrazyl (DPPH 11.9–170.3 TE/g). LB revealed highest CUPRAC (59.3–429.9 TE/g), ABTS (30.7–144.3 DPPH (32.6–170.3 TE/g) values. Due to lowest potential prepared using ChCl:CitA (AC 30.7–59.3 AC demonstrated by based on B:U 144.3–429.9 UAE conditions new DES consisting ChCl U optimized Box–Behnken design (BBD).
