Abstract Background Oxidative stress is currently one of the main threats to animal health, and flavonoids in forage have good antioxidant activity. However, impact fermentation on their activity still unclear. This study aims investigate effect lactic acid bacteria inoculation biological transformation alfalfa silage its relationship with Results Compared raw materials, can increase total flavonoid content alfalfa. The addition Pediococcus pentosaceus (CP115739.1) Lactiplantibacillus plantarum (CP115741.1) significantly ( P < 0.05). improved capacity Pearson correlation analysis showed a significant between DPPH (R = 0.62, 0.05), highly FRAP 0.70, 0.01). natural fermentation, leads changes process Its unique products, 3,7,4′-trioxyflavonoids, as well acacetin taxifolin 7-O-rhamnoside, are positively correlated Conclusions Silage contributes flavonoids, certain (including apigenin, luteolin, other free flavonoids). It worth noting that after improved, which may be attributed biotransformation related acacetin, 3,7,4′-trihydroxyflavonoids, 7-O-rhamnoside. provides potential pathway for obtaining value-added products by selecting specific inoculants. This study aimed to investigate the effects of fermentation on physicochemical properties and in vitro antioxidant activities Glycyrrhiza leaf, compare structures unfermented (GLP) fermented (FGLP) polysaccharides, assess their growth-promoting using zebrafish embryos. The results showed that polysaccharide content, extract yield, reduced sugar content leaf increased significantly after 36 h fermentation. In parallel, assays demonstrated for exhibited strong DPPH, hydroxyl radical scavenging, reducing power. Scanning electron microscope infrared spectroscopy analyses revealed differences surface morphology with both polysaccharides being acidic containing pyranose rings α-glycosidic bonds. molecular weight FGLP was lower than GLP, molar ratios guluronic acid, amino glucose, glucuronic xylose, arabinose were increased. model, promoted growth development embryos, most pronounced effect at a concentration 20 µg/mL superior protective against lipid peroxidation cell death induced by 2,2′-azobis (2-methylpropionamidine) dihydrochloride. findings could enhance utilization capacity. These opened avenues further research into bioavailability vivo offered valuable insights its potential as natural innovative antioxidant. Highlights

Kombucha is a well-known fermented beverage traditionally made from black tea infusion. Recent studies have focused on finding alternative materials to create novel kombucha beverages with various health benefits. In this study, we prepared and evaluated two using Rhodiola rosea Salvia miltiorrhiza as materials. The effects of fermentation the residue these plants were also investigated. antioxidant activities, total phenolic contents, concentrations bioactive compounds determined by Trolox equivalent capacity test, ferric-reducing power Folin–Ciocalteu method, high-performance liquid chromatography, respectively. results revealed that had strong capacities abundant contents. Additionally, higher FRAP, TEAC TPC values than without residue. On other hand, similar FRAP but lower compared correlation analysis showed gallic acid, salidroside, tyrosol responsible for abilities contents kombucha, salvianolic acid A B contributed kombucha. Furthermore, highest sensory scores among studied. These findings suggest are suitable making which can be used in preventing managing oxidative stress-related diseases.

Massa Medicata Fermentata (MMF) is a naturally fermented product used to treat indigestion and increase stomach activity in traditional medicine. This study examined the ability of hydrothermal extract MMF scavenge free radicals corresponding biological oxidative stresses, further protecting essential biomolecules. The anti-inflammatory effects were evaluated LPS-induced RAW264.7 macrophages zebrafish. In addition, on body mass index (BMI) cholesterol accumulation adult zebrafish fed high-cholesterol diet (HCD) for three weeks examined. prevented DNA lipid damage caused by stress, inhibited LDL oxidation, reduced expression cytokines related proteins (MAPK NFκB), with prominent anti-oxidative pathway (NRF2-HO-1) activation properties. NO production was reduced, BMI TC HCD suppressed embryos or bioactive aglycone quercetin may be contributing mechanisms systemic effects. has excellent antioxidant properties useful improving inflammation status metabolic profile, thus highlighting its potential as healthy, functional food.

The European market offers a variety of functional foods targeted at prediabetic and diabetic patients, with different approaches to reducing postprandial glucose levels. utilization white black mulberry in new products could be an area interest many conscious consumers. study aimed design novel form (dried) easy-to-prepare product by applying nutritious various proportions creating aesthetically appealing smoothie distinctive taste profile. Such was obtained utilizing the freeze-drying process, while typical smoothies are liquid. Sensory evaluations fresh, dried, reconstructed their basic characteristics were conducted. Moreover, antiradical tests (with ABTS+• DPPH•), phenolic compound profile (HPLC/PDA), L*a*b analyzed. results sensory evaluation divided into two groups: Polish foreign panelists. It observed that mulberry-licorice drop-based preferred fresh. Yet dried reconstituted capsule-based favored overall. Generally, both panelists lower concentrations licorice extracts (DB) fresh smoothies, or form, scored higher (DC) quite similarly (favored concentrations). From group identified compounds, cinnamic acid derivates dominated all analyzed smoothies. Many types flavonoids (quercetin, rutin, kaempferol) naringenin found Some differences noted but only statistically significant for DPPH• scavenging activity, which DB1, DB2, DC1 samples. even addition did not negatively affect panelists’ ratings activities.
