The interaction between dietary bioactive compounds and mycotoxins in food safety is crucial due to the potential health risks raised by protective functions of substances. This study focused on red beetroot (Beta vulgaris), a rich source polyphenols betalains, incorporated into daily consumption such as bread, examine its effects bioavailability using an vitro Caco-2 cell model. investigates how these affect mycotoxins, specifically ochratoxin A (OTA), aflatoxin B1 (AFB1), zearalenone (ZEA), which are known compromise intestinal barrier function nutrient absorption. Additionally, bioaccesibility total betalains (betacyanins betaxanthins) (TBC) (TPC) content was evaluated. beetroot-enriched breads were subjected digestion process, followed transepithelial transport assay assess differentiated cells. Results indicate increase TBC TPC (up 99 % 27 %, respectively) during digestion, suggesting enhanced absorption against mycotoxin-induced damage. presence bread increased with complex interactions observed, particularly triple mycotoxin's combination. results highlight components mycotoxins' bioavailability, underlining importance further research their mechanisms action applications nutrition.

Ochratoxin A (OTA), which is highly toxic and carcinogenic, easily produced in cereal crops, dry herbs, other foods under improper storage. Traditional detection methods, including high-performance liquid chromatography (HPLC) enzyme-linked immunosorbent assay (ELISA), can detect OTA accurately, but there are many problems such as long period, high cost, poor reproducibility. Therefore, developing a rapid, non-destructive, sensitive method for essential. In this paper, we used surface plasmon resonance (SPR) biosensor combined with terahertz (THz) spectroscopy to quantify OTA. As result, the concentration range of acetonitrile solution was up 0–20 pg/μL, limit 1 meet requirements most foods. Further, applied black tea, pg/mg, 500 times higher than UV spectrophotometry, completely meets EU regulations. This study shows that combination an SPR promising approach achieve simple, low-cost trace substance quantification drugs.
