The interaction between dietary bioactive compounds and mycotoxins in food safety is crucial due to the potential health risks raised by protective functions of substances. Ochratoxin A (OTA), which is highly toxic and carcinogenic, easily produced in cereal crops, dry herbs, other foods under improper storage. Traditional detection methods, including high-performance liquid chromatography (HPLC) enzyme-linked immunosorbent assay (ELISA), can detect OTA accurately, but there are many problems such as long period, high cost, poor reproducibility. Therefore, developing a rapid, non-destructive, sensitive method for essential. In this paper, we used surface plasmon resonance (SPR) biosensor combined with terahertz (THz) spectroscopy to quantify OTA. As result, the concentration range of acetonitrile solution was up 0–20 pg/μL, limit 1 meet requirements most foods. Further, applied black tea, pg/mg, 500 times higher than UV spectrophotometry, completely meets EU regulations. This study shows that combination an SPR promising approach achieve simple, low-cost trace substance quantification drugs.
