Acrolein (ACR) present in vivo and vitro can damage proteins DNA, linking it to various chronic diseases. In this paper, ergothioneine (EGT), abundant edible mushrooms, has been studied for its ability trap ACR reaction pathway with at high temperatures using ultraperformance liquid chromatography–mass spectrometry (UPLC–MS/MS). We synthesized the adducts (EGT-ACR-1 EGT-ACR-2), elucidating their structure site through HRMS nuclear magnetic resonance. Subsequently, we proved synergistic trapping effect on of EGT when combined γ-aminobutyric (GABA) disodium 5′-guanylate (GMP) binary or ternary employing Chou–Talalay methods.
