Abstract Anthocyanins are natural pigments, known for their antioxidant, anti‐inflammatory properties, and health benefits. One method to extract anthocyanins uses deep eutectic solvents (NADES). NADES mixtures of two or more compounds that result in a liquid with lower melting point than any its individual components. nontoxic, biodegradable can be obtained from renewable sources, making them an attractive alternative traditional solvents; therefore, they as the “21st century solvents.” This review provides comprehensive critical assessment use sustainable solvent system extraction. It also discusses main properties anthocyanins, NADES, process parameters, economic environmental analysis efficiently anthocyanins. Current state knowledge focusing on applicability within industrial context was evaluated identified gaps knowledge, highlighting advantages challenges provide recommendations future research.

This study evaluates the efficiency of 20 Natural Deep Eutectic Solvents (NADES) formulations for extracting curcuminoids and other bioactive compounds from turmeric emphasize their ability to preserve enhance antioxidant, antimicrobial, antidiabetic, skin depigmentation effects. The NADES formulations, prepared using choline chloride (ChCl) combined with sugars, carboxylic acids, glycerol, amino urea, polyols, betaine, were assessed extraction based on total phenolic content curcumin concentration. Fourier transform infrared spectroscopy was employed characterize synthesized confirm chemical composition. Bioactivity evaluations included antioxidant assays (ABTS DPPH), antidiabetic tests (α-amylase inhibition), antimicrobial assays, (tyrosinase inhibition). results demonstrated that significantly enhanced properties extracts compared water as a conventional green solvent. 18 (ChCl/1,2-propanediol/water 1:1:1) 19 (glycerol/betaine/water 1:1:3) exhibited highest yields, concentrations 30.73 ± 1.96 mg/g 31.70 2.02 mg/g, respectively, outperforming (26.91 1.72 mg/g), while 17 0.5:3:0.5:5) (glycerol/lysine/water most potent activity. Exploiting by-products from the oenological industry to extract antioxidant chemicals is a shared goal that combines need reduce wine sector’s environmental impact with improve availability of these biomolecules, according circular economy approach. Natural deep eutectic solvents (NaDES) have recently captured researchers’ interest as safer and more environmentally friendly alternative traditional due their effectiveness, low toxicity, stability. In this work, we set out investigate several NaDES for extraction phenolic local monovarietal grape pomace resulting different vinification procedures (including both red rosé Negroamaro Primitivo grapes; Susumaniello grapes white Chardonnay, Fiano Malvasia bianca grapes), additional generalizing use organisms selected wide plant biodiversity. Three binary choline chloride-based (DES-Lac, DES-Tar, DES-Gly, lactic acid, tartaric glycerol hydrogen bond donors, respectively) were compared ethanol conventional solvent, extracts evaluated using HPLC/MS colorimetric techniques. The results revealed each produces substantially higher total yield than (up 127.8 mg/g DW pomace). DES-Lac DES-Tar effective anthocyanins extraction; most abundant compound was malvidin 3-O-glucoside (highest pomace: 29.4 DW). Regarding compounds, DES-Gly producing comparable ethanol. Unexpectedly, Chardonnay has greatest content astilbin. cases, obtained by provided maximum yield. As result, emerged viable organic solvent techniques, allowing (or equal) yields while significantly lowering costs, hazards, impact.

Anthocyanins are bioactive compounds responsible for various physiological processes in plants and provide characteristic colors to fruits flowers. Their biosynthetic pathway is well understood; however, the enzymatic degradation mechanism less explored. Anthocyanase (β-glucosidase (BGL)), peroxidase (POD), polyphenol oxidase (PPO) enzymes involved degrading anthocyanins such as petunias, eggplants, Sicilian oranges. The aim of this work was investigate physicochemical interactions between these identified (via UPLC-MS/MS) cranberry (Vaccinium macrocarpon) through molecular docking identify residues likely anthocyanin degradation. Three-dimensional models were constructed using AlphaFold2 server based on consensus sequences specific each enzyme. with highest confidence scores (pLDDT) selected, BGL, POD, PPO achieving 87.6, 94.8, 84.1, respectively. These then refined dynamics 100 ns. Additionally, UPLC-MS/MS analysis flavonoids cranberries, including cyanidin, delphinidin, procyanidin B2 B4, petunidin, pelargonidin, peonidin, malvidin, providing important experimental data support study. Molecular simulations revealed most stable anthocyanase cyanidin 3-arabinoside 3-glucoside, a favorable ΔG interaction −9.3 −9.2 kcal/mol. This study contributes proposing seeking inhibitors prevent fruit discoloration.
