The fruits of citrus family are rich in flavonoids with superior antioxidant properties; bioactive components potentially beneficial without adverse effects or cytotoxicity healthy individuals. Citrus fruit peel contains ample amount hesperidin which is flavanone glycoside and has showed effective role biological systems as an anti-inflammatory compound. Different studies have investigated such roles hesperidin. Due to potential its derivatives, these compounds been intensively studied for their anti-cancer cardio protective perspective. Lime peels are food waste from lime product manufacturing. We previously developed and optimized a green extraction method for hesperidin-limonin-rich peel extract. This study aimed to evaluate the potential of beetroot powder (BP) as a functional ingredient in biscuits by investigating its effects on nutritional composition, sensory properties, and glycemic response. The primary goal was determine whether BP could serve natural alternative synthetic additives while maintaining product stability consumer acceptability. Biscuits were formulated replacing spelt flour with 15, 20, 25% BP. impact assessed based betaine content, macro- microelements, index (GI), acrylamide concentration. Thermal analysis (DSC TGA) water activity measurements confirmed BP's during six months storage. Increased content led higher levels mineral enrichment, particularly potassium phosphorus among macroelements zinc microelements. Sensory identified 20% most preferred, acceptable ratings even after months. Hardness initially increased incorporation but decreased over time (p < 0.05). BP-enriched significantly lower than control samples well below reference safety threshold. Citrus fruits and juices have been studied extensively for their potential involvement in the prevention of various diseases. Flavanones, characteristic polyphenols citrus species, are primarily compounds responsible these health benefits. Using silico vitro methods, we exploring possible antidiabetic action narirutin, a flavanone family member.
