Grain serves as an essential cornerstone for sustaining life and social stability. However, during storage grain is often invaded by mold, which leads to mildew issues. This problem diminishes nutrient content food quality raises safety concerns, including toxin production, can cause serious economic losses catastrophic market stability national security conditions. Accordingly, implementing effective measures prevent control mold crucial ensuring safety. paper analyzes the molds that affect storage, discussing their varieties, environmental needs, potential hazards. It also expounds on corresponding prevention measures, physical methods, chemical approaches, innovative inhibitors derived from microbes plants, micro-nano technology. These demonstrate significant suppression destroying cell structure of or inhibiting its physiological processes. In particular, technology enables embedding controlled release active ingredients. prolong duration enhance antibacterial stability, thus achieving more effects. Furthermore, it be concluded these strategies provide a theoretical foundation efficiency storage. Additionally, they assist in effectively addressing mold-related challenges while security.

ABSTRACT Pearl millet is a gluten‐free grain with several beneficial elements. It more nutritious than other grains like corn, sorghum, and rice. Because of its low glycemic index, it suitable for people celiac disease diabetes. However, due to limited shelf‐life, has less market demand. Milled flour cannot be kept week rancidity off‐flavor. Another constraint the presence antinutritional substances in grain, such as phytates tannins. Various approaches increasing shelf‐life pearl (PMF) have been used recent years. The most common thermal procedures include roasting, dry heating, steam treatment, blanching. Malting germination were effective lowering factors enzyme activity. Ultrasound cold plasma are nonthermal methods employed decrease millet. Dry heat blanching, microwave addition antioxidants, hydrothermal treatment extend by up 30 days. A combination different techniques, near‐infrared or irradiation, can 90 This review focuses on practical efficient strategies stakeholders enhance shelf life PMF reducing antinutrient without affecting nutritional properties. security sustainability process.
