Chitooligosaccharides, also known as chitosan oligomers or chitooligomers, are made up of with a degree polymerization (DP) that is less than 20 and an average molecular weight (MW) lower 3.9 kDa. COS can be produced through enzymatic conversions using chitinases, physical chemical applications, combination these strategies. significant interest for pharmacological medical applications due to its increased water solubility non-toxicity, wide range bioactivities, including antibacterial, anti-inflammatory, anti-obesity, neuroprotective, anticancer, antioxidant effects. Tomatoes are consumed worldwide as fresh vegetables because of their high contents essential nutrients and antioxidant-rich phytochemicals. contain minerals, vitamins, proteins, amino acids (leucine, threonine, valine, histidine, lysine, arginine), monounsaturated fatty (linoleic linolenic acids), carotenoids (lycopene β-carotenoids) phytosterols (β-sitosterol, campesterol stigmasterol). Lycopene is the main dietary carotenoid in tomato tomato-based food products lycopene consumption by humans has been reported to protect against cancer, cardiovascular diseases, cognitive function osteoporosis. Among phenolic compounds present tomato, quercetin, kaempferol, naringenin, caffeic acid lutein most common. Many these have antioxidant activities effective protecting human body various oxidative stress-related diseases. Dietary tomatoes increase body's level antioxidants, trapping reactive oxygen species reducing damage important biomolecules such membrane lipids, enzymatic proteins DNA, thereby ameliorating stress.
