Abstract Ultra-processed foods (UPF), defined using the Nova classification system, are associated with increased chronic disease risk. More recently, evidence suggests UPF subgroup of whole-grain breads and cereals is in fact linked reduced This study aimed to explore associations cardiometabolic risk measures intake versus when ≥25% or ≥50% whole grain excluded from definition. ABSTRACT Background Front-of-pack labeling (FOPL) has been implemented in several countries the Americas, with Chile being first to introduce a mandatory ‘high in’ warning FOPL 2016. The Pan American Health Organization (PAHO) food classification criteria, considered best practice for regulations, adopted by Mexico, Argentina, and Colombia. Canada’s regulations were recently approved will take effect January 2026, but it is unknown how these compare that have already other parts of region. Using a unique thirty-year panel of U.S. registered nurses, we document long-term links between health outcomes (chronic conditions and body mass index) healthy behaviors (diet exercise). The data points to two distinct groups individuals: 1) stayers, who consistently maintain weight have no chronic throughout their adult lives; 2) gainers, initially start but gradually experience an increase in BMI onset conditions. We find that stayers lead healthier lives than gainers. While many countries use guidance and policies based on nutrients food groups to support citizens consume healthy diets, fewer have explicitly adopted the concept of ultra-processed foods (UPF). UPF consumption is associated with adverse health outcomes in cohort studies. In UK, a nutrient profiling model (NPM) used identify high fat, salt or sugar (HFSS) several target these.
