The demand for innovative meat analogues is a relevant issue in the food sector. This result of, among other things, growing awareness of impact animal production on natural environment, as well consequences related to consumption products. In response increasing expectations consumers who are looking functional products with controlled allergenicity, recipe and technology gluten-free soy-free plant-based increased antioxidant capacity has been developed. Using surface method (RMS), proportions water, gelling substances, microencapsulated anthocyanins were optimized obtain desired texture, colour, rheological properties, capacity, polyphenol content, sensory acceptance. dosage water was calculated at 52.19%, microcapsules 2.74%, agents 1.59%. Meat and meat products are important foods in the human diet, but there concerns about their quality safety. The discovery of carcinogenic genotoxic N-nitroso compounds (NOCs) processed has had serious negative impacts on industry. In order to clarify relationship between use nitrite or nitrate safety products, we reviewed NOCs origin implications NOCs, effects quality, national regulations, recent publications concerning using reduction methods. This study explores the complex effects of inorganic chemicals on quality meat and health consumers at different stages processing.
