While food additives are widely used in the modern industry and generally important maintaining ability to provide for increasing world population, progress occurring this field is much ahead of evaluation their possible consequences human health. The present study suggests a set single- multi-enzyme assay systems revealing toxic effects most spread preservatives, such as sorbic acid (E200), potassium sorbate (E202), sodium benzoate (E211) at primary molecular level interaction with enzymes. based on inhibition enzyme activity by substances proportional amount toxicants sample. single-enzyme system NAD(P)H:FMN oxidoreductase (Red) proved be sensitive impact additives, IC50 values being 29, 14, 0.02 mg/L benzoate, sorbate, acid, respectively, which considerably lower than acceptable daily intake (ADI). No reliable change degree preservatives was observed upon elongating series coupled redox reactions. However, 50% found preservative concentration below maximum permissible food. effect butyrylcholinesterase (BChE), lactate dehydrogenase (LDH), alcohol (ADH) either absent or presence concentrations significantly exceeding ADI. Among under study, considered safest terms inhibiting activity. results show that negative organization living things highly pronounced, while organismal it may not obvious.
