Metabolic associated fatty liver disease (MAFLD) formerly known as non-alcoholic (NAFLD) is the most common chronic disease. Tempe is a promising dietary option for diabetes mellitus (DM) sufferers due to its high fiber and low glycemic index. This study aimed assess the nutritional quality of tempe, suitability as high-fiber functional food per PerBPOM No. 1 2022, DM sufferers' perceptions importance. Findings indicated that tempe met Indonesian National Standards moisture, protein, fat, but crude content was above standard (>2.5%). However, standards (≥6 g/100 g). Initially, only 25% respondents considered essential management, after education, 69% recognized importance, demonstrating counselling enhances positive consumption. Age significantly related portion meal, frequency consumption increased with higher expenditure. The pathophysiology of diabetes has been studied extensively in various countries, but effective prevention and treatment methods are still insufficient. In recent years, epigenetics received increasing attention from researchers exploring the etiology diabetes. DNA methylation, histone modifications, non-coding RNAs play critical roles occurrence, maintenance, progression its complications. Therefore, preventing or reversing epigenetic alterations that occur during development may reduce individual societal burden disease. Dietary flavonoids serve as natural modulators for discovery biomarkers alternative therapies. However, there is limited knowledge about potential beneficial effects on this review, multidimensional different flavonoid subtypes were summarized. The edible beans in Fabaceae have been used for foods and medicines since the ancient time, being more more. It is also appeared as a major ingredient dairy cooking menu many regions including Thailand, rich biodiversity country. Many studies reported on health benefits of their flavonoids, but there no report effect phytochemical profile pharmacological potentials.
