Flavonoids
are

The

years.

Polyphenols
(PPs)
are
recognized
as
bioactive
compounds
and
antimicrobial
agents,
playing
a
critical
role
in
enhancing
food
safety,
preservation,
extending
shelf
life.
The
effectiveness
of
PPs
has

molecular

reasons,
predominantly
linked
to
their
hydroxyl
groups

established
