Protein is a fundamental macronutrient in the human diet. It supplies our organisms with essential amino acids, which are needed for growth and maintenance of cells tissues. Conventional protein sources, despite their complete acid profiles excellent digestibility, have proven negative impact on environment. Furthermore, production poses many ethical challenges. This review aims to present nutritional, more ethical, environmentally friendly alternatives that could serve as potential sources population. The available literature alternative has been analyzed. Germinated edible seeds and sprouts have attracted consumers because of their nutritional values health benefits. To ensure the microbial safety seed sprout, emerging processing methods involving physical fields (PFs), having characteristics high efficiency environmental safety, are increasingly proposed as effective decontamination technologies. This review summarizes recent progress on application PFs to germinating seeds, including impact quality associated influencing mechanisms in germination. The effectiveness, scope, limitation various techniques, ultrasound, microwave, radio frequency, infrared heating, irradiation, pulsed light, plasma, high-pressure processing, symmetrically reviewed. Metalloenzymes play an important role in the regulation of many biological functions. An effective way to prevent deficiencies essential minerals human diets is biofortification plant materials. (1) Background: Plant growth regulators (PGRs) can accelerate or improve the quality and quantity of bean sprouts but are forbidden to use in sprout cultivation, as sprouting process’s increased chemicals will disturb PGRs analysis. This article aimed increase accuracy level sensitivity LC-MS/MS method for simultaneous analysis 10 after mixed solid phase extraction (SPE) purification. (2) Methods: An detection kinds was established based on ESI ionization positive ion mode 6-furfurylaminopurine (6-KT), paclobutrazol (PBZ), indole-2-acetic acid (IAA), indole-3-butyric (IBA) negative gibberellin A3 (GA3), 2,4-dichlorophenoxy acetic (2,4-D), 4-chlorophenoxyacetic (4-CPA), forchlorfenuron (FCF), thidiazuron (TDZ), 6-benzyl adenine (6-BA). (3) Results: The PGR compounds were detected within a concentration range 1.0–50 ng/mL. average recovery 68.3–97.3% with relative standard deviations (RSD) 4.6–15.2% (n = 6); limit (LOD) quantification (LOQ) found be 2 5 ng/g, respectively. surveyed 36 soybean 33 mungbean sprouts; results showed that 4-CPA IAA sprouts, Five samples contained both IAA.
