Cardiovascular

concerns
about
impact
omega-6
polyunsaturated
fatty
acids
(n-6
PUFAs)
on
cardiovascular
health.
This
study
aims
to
evaluate
relationship
between
serum
linoleic
acid
(LA)
levels
and
waist-to-height
ratio
(WHtR),
a
recognized
risk
marker,
in
children.
The
research
was
conducted
two
parts.
First,
global
analysis
publicly
available
data
(2019–2021)
explored
association
nutritional
factors
CVD
prevalence
across
183
countries.
Second,
cross-sectional
involving
67
children
(33
obesity
34
healthy
weight,
classified
using
BMI
Z-scores)
examined
correlation
LA
WHtR.
Global
revealed
moderate

раціону

Розширення
асортименту
сардельок
геродієтичного
призначення
шляхом
використання
нетрадиційної
сировини
рослинного
походження
як
джерела
поліненасичених
жирних
кислот
та
волокон
актуальним
завданням
в
м’ясопереробній
галузі.
Мета.
Обгрунтування
технології
включенням
рецептуру
нетрадиційних
видів
–
насіння
льону
білого,
борошна
конопель,
псилліуму,
олії
оливкової
солі
морської.
Методи.
Для
оцінки
якості
розробленої
використовували
загальноприйняті
методи
визначення
хімічного
жирнокислотного
складу.
Результати.
Встановлено,
що
біле,
борошно
псилліум,
олія
сіль
морська
перспективною
сировиною
призначення.
За
результатами
органолептичних
показників
встановлено,
сардельки
досліджуваного
складу
характеризуються
високими
органолептичними
показниками
якості.
Встановлено
підвищену
масову
частку
на
2.02
%
у
дослідному
зразку
порівняно
контрольним.
Використання
білого
дало
змогу
отримати
готовий
продукт
підвищеним
вмістом
омега-3
омега-6
0.579
0.783
відповідно
контролем.
