The

Abstract
The

studies
have
suggested
that
TNFR1
activation
involves
conformational
rearrangements

Thanks

its

characteristics,
such
as
solubility,
emulsification,
gelling
foaming,
it
has
been
widely
exploited
in
food
manufacturing.
Also,
advances
processing
technologies
have
enabled
industrial
production
variety
whey-based
products
exerting
biological
activities.
The
beneficial
properties
whey
(WPs)
include
their
documented
effects
on
cardiovascular,
digestive,
endocrine,
immune
nervous
systems,
putative
role
prevention
treatment
non-communicable
diseases
(NCDs).
In
this
regard,
research
application
for
health
enhancement,
based
optimization
product
formulation

Lactoferrin
(LF),
a
multifunctional
glycoprotein
with
high
iron-binding
affinity,
plays
critical
role
in
modulating
physiological
processes
through
its
ability
to
reversibly
bind
and
release
iron
ions,
existing
two
distinct
states:
iron-saturated
(holo-LF,
>
85%
saturation)
iron-deficient
(apo-LF,
<
5%
saturation).
However,
the
importance
of
saturation
has
been
largely
overlooked
LF
production
research
due
lack
standardized
protocols.
The
level
dictates
functional
specificity:
apo-LF
exhibits
potent
antimicrobial
properties
by
chelating
disrupting
membrane
integrity,
while
also
significantly
inhibiting
oxidative
stress,
thereby
alleviating
neurological
disorders
immune
responses.
In
contrast,
holo-LF
participates
metabolism
transport,
influencing
tumor
cell
proliferation
systemic
uptake.
This
review
systematically
evaluates
interplay
between
levels
LF's
biological
functions,
emphasizing
