Analysis and evaluation of the protein and amino acid composition of Shubat and Kymyz produced in Kazakhstan

The global community, including Kazakhstan, works on achieving 17 Sustainable Development Goals by 2030. Among these directions, one of the 10 priority tasks country's President K. Tokayev, task supplying domestic market with locally-produced foodstuff, is very relevant. Currently, industries based traditional dairy farming are gradually starting to manufacture shubat and kymyz produced from noncattle milk. This article presents results determining value protein amino acids in made local farmers Kazakhstan evaluating products' properties. amount was 2.8 g 2.2 kymyz. Using HPLC method, different were determined composition samples. them, content glutamic acid highest two samples (590 g/100 401 g), tryptophan least (43 methionine (27 g). In both samples, special types found shubat: isoleucine 141 mg/100 g, threonine 140 phenylalanine 118 52 g; kymyz: arginine 103 Ala 98 Gly 45 g. ratio replaceable nonreplaceable was-40.5:59.5, kymyz, it was-36:64. It observed that biological this high according requirements FAO/WHO (36.0%). EAA/TAA, EAA/NEAA, BCAA/TAA 40.5%, 68%, 20% 35.9%, 56%, 18% respectively. According ideal scale proposed (40%, 60%, 20%), valuable compared sweet tasty shubat.
