Optimization of fermentation conditions and blending process of fairy bean in North Anhui Province DOI Creative Commons

Functional fermentation strains were isolated and screened from traditional fairy beans in northern Anhui. Through technical identification, Bacillus subtilis SXD06 was determined to be the superior strain, while Wickerhamomyces anomalus YE006 identified as optimal aroma-producing yeast. Utilizing single-factor experiments response surface optimization, a Central Composite Design blending model established. The conditions be: an inoculation amount of 1.1% for SXD06, 4.2% YE006, temperature 34 °C, Fermentation lasted 84.2 h. SDS-PAGE electrophoresis comparison between control sample groups indicated effective fermentation, with most converting amino acids. Optimal 5.5% salt, 0.26% star anise powder, 0.25% cinnamon, 1.5% pepper, 4.5% edible alcohol, 0.28% fragrant leaves. sensory evaluation soybean products produced under specified yielded highest scores. This study offers robust support development low-ammonia, high-quality bean that align consumer preferences.

Enzymes of the cytochrome P450 monooxygenase family 4 (CYP4) in mammals are generally involved either endobiotic metabolism (e.g., acting on fatty acids or eicosanoids), modification xenobiotics including therapeutic drugs. CYP4B1 is special, as it an enigmatic enzyme at interface between xenobiotic and metabolism. However, a systematic analysis CYP4B1’s substrate scope has not yet been reported. Herein, three-step approach to identify novel substrates for three orthologs (namely from rabbits, green monkeys, mouse lemurs) described. First, screening library containing 502 natural products revealed potential groups CYP4B1. Second, based these results, was defined consisting 63 compounds representing 10 compound groups. Third, vitro conversion by identification were conducted, supported silico docking, allowing prediction binding probabilities oxidation sites. We report five new (acyclic, monocyclic bicyclic terpenoids, stilbenoids, vanilloids), twenty-eight (inter alia capsaicin, gingerol, genistein, stilbene, myristicin, thioanisole), two reaction types (S-oxidation, O-demethylation). Consequently, far more promiscuous than previously thought.

Background/Objectives: Capsaicin is the principal pungent compound in chili peppers and increasingly recognized as a multifunctional phytochemical with systemic effects beyond its sensory properties. It has been linked to metabolic regulation, neuroprotection, inflammation control, cancer modulation. This review aims provide an integrative synthesis of capsaicin’s metabolism, interaction gut microbiome, physiological implications across organ systems. Methods: We conducted critical literature recent vivo vitro studies exploring fate, biotransformation by host enzymes microbes, tissue distribution, molecular pathways.
