Long-term survival rates after a diagnosis of breast cancer are steadily rising. This is good news, but clinicians must also recognize that this brings new challenges to the medical community. Abstract BACKGROUND The continuous increase of global consumer's dietary behaviors towards reducing meat consumption due to health benefits, ecological, ethical, and social aspects. Texturized vegetable protein (TVP) transformed from plant protein‐based ingredient can impart fibrous structure like muscle meat. However, there is limited information on a comparison product properties TVP meats. In this study, the physicochemical properties, texture, different types meats (beef, pork, chicken) were investigated. RESULTS nitrogen solubility integrity index, chewiness cutting strength similar that chicken sample compared other water absorption capacity (2173.84 g kg −1 ) was significantly higher than all samples (1095.37 1653.52 ). color amino acids difference in types. showed with non‐uniform air cells.
