Increasing evidence has confirmed that whole grain oats are effective in regulating hyperlipidemia. However, which specific ingredient is crucial remains unclear. Wheat bran (WB) is the primary by-product of wheat processing and contains a high concentration bioactive substances such as polyphenols. This study analyzed qualitative quantitative components polyphenols in their effects on ulcerative colitis (UC) using dextran sulfate sodium (DSS)-induced model mice. The potential mechanism (WBP) was also examined. Our findings indicate that main polyphenol constituents WBP were phenolic acids, including vanillic acid, ferulic caffeic gallic protocatechuic acid. Furthermore, exerted remarkable protective against experimental colitis. achieved by reducing severity improving colon morphology. A novel food packaging film was developed by incorporating a tea polyphenols-loaded pullulan/trehalose (TP@Pul/Tre) into composite with ultrasound-assisted treatment of dual-frequency (20/35 kHz, 40 W/L) for 15 min to assess the physicochemical and mechanical properties film. The optimized significantly increases elongation at break, tensile strength, improves film's UV/water/oxygen barrier properties. Structure analysis using attenuated total reflectance-Fourier transform infrared, X-ray diffraction thermal stability revealed that these improvements were achieved through ultrasound-enhanced H-bonds, more ordered molecular arrangements, good intermolecular compatibility. Besides, TP@Pul/Tre has proven have antibacterial performance against Escherichia coli Staphylococcus aureus, approximately 100 % lethality 4 h 8 h, respectively. Moreover, effectively delayed moisture loss, oxidative browning, decay, deterioration in fresh-cut apples pears, thereby extending their shelf life. Thus, ultrasound proved be an effective tool improving quality films, wide range applications.
