Mushrooms are known to be a nutritional powerhouse, offering diverse bioactive compounds that promote and enhance health. provide distinguishable taste aroma an essential source of vitamin D2, B complex, hydroxybenzoic acids (HBAs) hydroxycinnamic (HCAs), terpenes, sterols, β-glucans. Edible mushroom varieties such as Hericium erinaceus, Ganoderma sp., Lentinula edodes recognized functional foods due their remarkable potential for disease prevention promotion overall health well-being. These have antioxidants, anti-inflammatory, cytoprotective, cholesterol-lowering, antidiabetic, antimicrobial, anticancer properties, well controlling blood pressure, being immunity booster, strengthening bone properties. In addition, they contain non-digestible oligosaccharides (NDOs) ergothioneine, substrate gut microflora. Supplementing our daily meals with those can add value food, providing benefits. It is widely known that mushrooms present several properties with applications in the medicinal and pharmaceutical sectors, including antimicrobial, immunomodulatory, antioxidant, hypotensive, neuroprotective, anti-inflammatory activities. This article aims to review examples of bioactive metabolites responsible for those activities, such as polysaccharides, phenols polyphenols, terpenes, peptides, alkaloids, steroids, which are produced by relevant mushroom species. also discusses their production through solid-state fermentation submerged fermentation, well processes obtention extracts considerations on stability aiming industrial applications. In addition, examines patent landscape surrounding mushroom-derived bioactives, shedding light intellectual property history innovations driving this field forward. Mushrooms provide essential nutrients and bioactive compounds, namely glucans, protein, phenolic compounds. In this study, two aqueous extractions were performed (M1 M2) using Pleurotus ostreatus, eryngii, Agrocybe cylindracea. M1, a hot extraction (extract M1) (90 °C, 700 rpm, 1 h) was performed. M2, room-temperature M2A) followed by M2B) of the extract M2A residue The M2B extracts showed lowest yields (12.58–21.78%), while other ranged between 30.91% 46.03%. All had high protein (12.09–32.97 g/100 g dry extract), glucan (12.69–48.57 contents (7.90–16.65 mg GAEs/g extract) antioxidant (ABTS ORAC assays), antimicrobial, antibiofilm, prebiotic activities.
