Microbial biosurfactants are an attractive and promising class of molecules with the potential to replace oil-derived surfactants for formulation ecofriendly biocompatible products. In this review, we discuss literature findings, mostly reported in last decade, on self-assembly four main classes microbial biosurfactants, i.e., rhamnolipids, mannosylerythritol lipids, sophorolipids, surfactin. All them present composite molecular structures, characterized by different functional groups ionizable moieties a high conformational flexibility. Natural surfactants are surface-active molecules synthesized from renewable resources (i.e., plants, animals, or microorganisms) and possess properties comparable to conventional surfactants, making them an environmentally friendly potential alternative petrochemical surfactants. Additionally, they exhibit biological such as anti-microbial properties, biodegradability, less toxicity, allowing their use in everyday products with minimal risk human health the environment. Based on mode of production, natural can be classified into first-generation bio-based second-generation biosurfactants, although definition may vary depending author literature. Abstract Solubilization of oil‐soluble substances in aqueous solution is essential daily chemistry. Commonly used synthetic solubilizers are environmentally harmful and have limited applications. In this study, sophorolipid, a biosurfactant, was purified through an efficient, simple, solubilization‐compatible method, yielding acidic sophorolipid (acid‐SL) with high purity 96 wt%. The bola structure acid‐SL conferred reversible pH‐responsive micelle behavior therefore distinctive solubilization effect on polar small molecules under neutral pH environment. Based this, the synergistic combination rhamnolipid (RL) confirmed, optimal compound ratio being acid‐SL/RL = 0.95:0.05. system significantly improved ability conditions had superior capacity for such as oils, fragrances, preservatives compared to commonly like Polysorbate 20 Polyoxyethylene 40.

Summary Sophorolipids present antimicrobial and antioxidant activities allowing their application in meat products such as sausages. In this study, formulations of chicken sausages were developed with 0.008%–0.06% sophorolipid supplementation. Microbiological analyses showed that sophorolipids induced a significant reduction Clostridium perfringens contamination decreased lipid oxidation rates compared control samples (sausages curing salts). Abstract Sophorolipids (SLs) are promising glycolipid biosurfactants as they easily produced and functional. SLs from microorganisms comprised of mixtures multiple derivatives that have different structures properties, including well-known acidic lactonic SL (ASLs LSLs, respectively). In this study, we established a method for analyzing all in the products Starmerella bombicola , typical SL-producing yeast.
