While using saccharides as stabilizers for therapeutic protein drying is common, the mechanisms underlying stabilization during remain largely unexplored. Herein, we investigated effect of different saccharides, trehalose dihydrate (TD), dextran (DEX), and hydroxypropyl β-cyclodextrins (low substitution-HP high substitution-HPB), on relative activities enzymes trypsin catalase miniaturized (MD) or spray (SD). For trypsin, presence especially HP, was beneficial, it significantly improved enzyme activity following MD. The HPB preserved trypsin's MD SD. Adding did not show a notable improvement in activities. Increasing TD beneficial SD catalase, indicated by increased activity. Molecular docking molecular dynamics simulations oftrypsin with HP revealed influence their substitution binding affinity enzyme. A higher to bind itself observed simulations. Experimentally, reduction mainly MD, attributable droplet temperature than from experiments aggregation propensity modeling helped elucidate impact size preserving drying.

In this study, the inhibitors of apricot browning were analyzed by investigating effects osmotic dehydration (OD) pretreatment combined with chlorogenic acid (CA) on cell disruption, loss phenolic substrates, and changes in key enzymes during freeze-thawing. Both OD OD-CA mitigated deterioration caused ice crystal damage significantly reduces BI apricots 43.27 59.55 compared to CK. The PPO POD activity are only 61.11% 42.13% those OD. could also protect SOD CAT activity, their being 1.41 1.14 times that group. This indicated treatment protected against activities ROS-scavenging enzymes. Coconut milk is an unstable emulsion system, mainly stabilized by proteins, which limits the development of food industry. The aim this study was to investigate mechanisms for increasing stability through interaction between coffee polyphenols (CPs) and coconut globulin (CG), main protein in milk. Caffeic acid (CA), chlorogenic (CHA), ferulic (FA) were selected as CP models. results showed that hydrogen bond interactions occurred CG CPs (CG-FA < CG-CA CG-CHA). CHA containing quinic preferentially formed a strong with CG. changed lipophilicity facilitated formation dense thick interfacial film at oil-water interface. Furthermore, CG-CPs excellent after storage, centrifugation, pH, salt treatment, especially CG-CHA. This could provide theoretical basis improving products.

Abstract As a nutritious plant with valuable potential, the Moringa oleifera Lam. (MOL) leaf addition on Fuzhuan brick tea (FBT) for co‐fermentation (MOL‐FBT) was an industry innovation and new route to make full use of MOL leaf. After optimization extraction conditions, best conditions polyphenols method from MOL‐FBT (MFP) were 60°C 40 min (1:80, V/W) using response surface methodology. A total 30 phenolics identified quantified. Most increased after adding compared FBT polyphenols. In particular, caffeic acids found only in MFP. Moreover, MFP received high value taste, aroma, color. total, 62 volatile flavor compounds, consisting 3 acids, 5 alcohols, 15 aldehydes, 4 esters, 20 hydrocarbons, 10 ketones, others, addition, inhibited 3T3‐L1 preadipocyte differentiation dose‐dependent manner decreased lipid accumulation via peroxisome proliferator‐activated receptor gamma (PPARγ)/CCAAT/enhancer binding protein alpha (CEBPα)/cluster 36 (CD36) axis induced brown adipocyte‐like phenotype. vivo experiments further conducted confirm vitro results. regulated accumulation, glucose/insulin tolerance, improved liver kidney function, secretion pro‐inflammatory factors by PPARγ/CEBPα/CD36 alleviated inflammation fat fructose diet‐induced obese mice. summary, possesses high‐quality properties anti‐obesity effects, as well great potential be used novel functional food product.

Resistance to chemotherapeutics is an eminent cause that leads search for options help in diminution of pancreatic ductal adenocarcinoma (PDAC) by overcoming resistance issues.
