While
using
saccharides
as
stabilizers
for
therapeutic
protein
drying
is
common,
the
mechanisms
underlying
stabilization
during
remain
largely
unexplored.
Herein,
we
investigated
effect
of
different
saccharides,
trehalose
dihydrate
(TD),
dextran
(DEX),
and
hydroxypropyl
β-cyclodextrins
(low
substitution-HP
high
substitution-HPB),
on
relative
activities

miniaturized

(SD).

trypsin,

HP,

beneficial,

Coconut
milk
is
an
unstable
emulsion
system,
mainly
stabilized
by
proteins,
which
limits
the
development
of
food
industry.
The
aim
this
study
was
to
investigate
mechanisms
for
increasing
stability
through
interaction
between
coffee
polyphenols
(CPs)
and
coconut
globulin
(CG),
main
protein
in
milk.
Caffeic
acid
(CA),
chlorogenic
(CHA),
ferulic
(FA)
were
selected
as
CP
models.

showed
that
hydrogen
bond
interactions
occurred
CG
CPs
(CG-FA
<
CG-CA

Abstract
As
