As a rare and functional edible mushroom, the market potential of ready-to-eat fresh-cut Changgen mushrooms (Oudemansiella raphanipes) is booming in developing countries. However, preservation challenging distribution consumption. The present study discovered that exogenous L-cysteine (L-Cys) treatment delayed weight loss, browning degree, nutrition depletion microbial contamination at 4 °C. Based on transcriptomic data, L-Cys significantly activated metabolism 17 amino acids, including methionine, prerequisite for hydrogen sulfide (H2S) synthesis. Exogenous also stimulated activities gene expressions cystathionine beta-synthase gamma-lyase, thereby increasing H2S levels. Furthermore, enhanced energy by improving cytochrome c oxidase, H+-ATPase Ca2+-ATPase enzymes activity. reduced reactive oxygen species regulating enzyme such as polyphenol catalase superoxide dismutase. This contributes valuable insights into physiological function role mushroom.
