D-allose, a C-3 epimer of D-glucose and an aldose-ketose isomer D-allulose, exhibits 80% sucrose's sweetness while being remarkably low in calories nontoxic, making it appealing sucrose substitute. Its diverse physiological functions, particularly potent anticancer antitumor effects, render promising candidate for clinical treatment, garnering sustained attention. However, its limited availability natural sources the challenges associated with chemical synthesis necessitate exploring biosynthetic strategies to enhance production. This overview encapsulates recent advancements D-allose's physicochemical properties, applications, biosynthesis. It also briefly discusses crucial role understanding aldoketose isomerase structure optimizing performance D-allose synthesis. Furthermore, delves into future perspectives bioproduction. Early efforts focused on identifying characterizing enzymes responsible production, followed by detailed crystal analysis improve through molecular modification. Abstract Six lactic acid bacteria (LAB) isolated from Algerian sheep’s milk, traditional butter, date palm sap and barley, which produce dextran, mannitol, oligosaccharides vitamin B 2 have been characterized. They were identified as Leuconostoc mesenteroides (A4X, Z36P, B12 O9) Liquorilactobacillus mali (BR201 FR123). Their exopolysaccharides synthesized sucrose by dextransucrase (Dsr) characterized dextrans with (1,6)- d -glucopyranose units in the main backbone branched at positions O -4, -2 and/or -3, side chain. A4X was best dextran producer (4.5 g/L), while other strains 2.1–2.7 g/L. Zymograms revealed that L. a single Dsr molecular weight (Mw) of ~ 145 kDa, Lc. possess one or two enzymes 170–211 kDa Mw. As far we know, this is first detection Dsr. Analysis metabolic fluxes six LAB produced mannitol (~ 12 g/L). The co-addition maltose–sucrose resulted production panose (up to 37.53 mM), an oligosaccharide known for its prebiotic effect. A4X, Z36P showed dextranase hydrolytic enzymatic activity able another trisaccharide, maltotriose, instance encoded strains. Furthermore, O9 grew absence riboflavin (vitamin ) vitamin, defined medium level 220 μg/L. Therefore, these LAB, especially B12, are good candidates development new fermented food biofortified functional compounds.

D-tagatose is a rare, naturally occurring low-calorie hexose, with sweetness of 92% sucrose but only 1/3 the calories. It has beneficial functions in lowering blood sugar, controlling obesity, preventing dental caries, and improving intestinal flora. In recent years, biotechnological routes to production from renewable raw materials have been regarded as very promising approaches. this review, we provide an overview properties applications D-tagatose, focus on current developments using enzymatic transformation whole-cell catalytic synthesis. The biosynthetic pathways types characteristics enzymes involved summarized, providing reference for design synthesis pathways. Sugar substitutes have become a topic of interest with the revelation strong link between excessive sugar consumption and many chronic diseases. One components known to be harmful human health as result mutagenic, carcinogenic cytotoxic effects in bakery products is 5-hydroxymethyl furfural (HMF). Therefore, present study aimed investigate effect using some (liquid stevia, agave syrup, date apple juice concentrate) on quality HMF levels cakes. The total colour changes crumb crust all cakes compared control group (sucrose) were visually noticeable (ΔE > 3). Mean values hardness, baking loss, water activity significantly higher mean volume symmetry index lower (P < 0.05) substituted group. A 100% substitution sucrose conventional sweeteners decreased energy (between 6.9% 10.1%) carbohydrate content 18.1% 47.9%) 0.05). cake sweetened only liquid stevia was than this decrease statistically significant Stevia seems best alternative lowest highest sensory analysis scores other substitutes.
