Abstract Food science encounters increasing complexity and challenges, necessitating more efficient, accurate, sensitive analytical techniques. Mass spectrometry imaging (MSI) emerges as a revolutionary tool, offering molecular‐level insights. This review delves into MSI's applications challenges in food science. It introduces MSI principles instruments such matrix‐assisted laser desorption/ionization, desorption electrospray ionization, secondary ion mass spectrometry, ablation inductively coupled plasma highlighting their application chemical composition analysis, variety identification, authenticity assessment, endogenous substance, exogenous contaminant residue quality control, process monitoring processing storage. Despite its potential, faces hurdles the cost of instrumentation, sample preparation, limited capabilities, lack standardization for samples. While has wide range analysis can provide comprehensive accurate results, persist, demanding further research solutions. The future development directions include miniaturization devices, high‐resolution high‐speed MSI, multiomics multimodal data fusion, well artificial intelligence. Triclocarban (TCC) is a common antimicrobial agent that has been widely used in medical care. Given the close association between TCC treatment and metabolic disorders, we assessed whether long-term to at human-relevant concentration could induce nephrotoxicity by disrupting levels mouse model. Matrix-assisted laser desorption/ionization mass spectrometry with postionization (MALDI-2 MS) has become an important technique for the analysis of a wide range biomolecules. It traditionally been limited to custom lab-built setups until recent introduction commercial timsTOF fleX MALDI-2 system. A comprehensive optimization system lipid was performed using factorial design experiments (DOE). By examining 13 instrumental parameters across three full DOEs, we over 1500 individual runs assess impact and cross interactions these on signal intensity. We found optimal values both ion transmission maximize signals within region. These results show that shot frequency, collision RF, pre pulse storage were essential enhancing transmission, resulting in nearly 5-fold increase intensity compared default parameters. Mung beans are promising for protein ingredient production, but their benefits hindered by potential antinutritional factors and coloring compounds in the hull, resulting darker-colored products. To address this issue, study aims to identify a germination period that enhances dehulling efficiency while minimizing mass losses chemical alterations. bean seeds were soaked overnight germinated dark 4, 8, 12, 24, 32, 48 h, with effects on efficiency, enzymatic activities, composition, including factors, examined.
