Research in metagenomics and metaproteomics can reveal how microbiological interactions fermented foods contribute to their health benefits. This study examined three types of vegetables: a standard formulation, probiotic formulation with Lacticaseibacillus rhamnosus GG, polyphenol vitexin from Mung bean seed coat.
