Carrot
(Daucus
carota
L.)
is
a
globally
consumed
root
vegetable,
enjoyed
both
raw
and
after
thermal
processing.
This
study
aimed
to
evaluate
the
effect
of
different
heat
treatment
methods
(traditional
boiling
in
water,
steaming
steel
pot,
combi
oven,
baking
sous-vide
technique)
on
carrot
color,
total
phenolic
flavonoid
content,
carotenoid
compound
profiles,
antioxidant
capacity.
It
was
found
that
treatments
resulted
significant
(p
≤
0.05)
changes
with
reductions
lightness
(L*
decreased
by
19–24%),
redness
(a*
52–67%),
yellowness
(b*
15–25%).
Interestingly,
processed
carrots
showed
an
increase
phenolics
(by
25–133%),
flavonoids
60–126%),
carotenoids
levels
16–48%)
compared
carrots.
However,
specific
compounds
notable
treatment,
including
vanillic
acid
rutin
(100%
reduction

treatments),

Periodontal
disease
is
a
chronic
inflammatory
condition
that

Traditional
periodontal
treatments,
