Carrot (Daucus carota L.) is a globally consumed root vegetable, enjoyed both raw and after thermal processing. This study aimed to evaluate the effect of different heat treatment methods (traditional boiling in water, steaming steel pot, combi oven, baking sous-vide technique) on carrot color, total phenolic flavonoid content, carotenoid compound profiles, antioxidant capacity. It was found that treatments resulted significant (p ≤ 0.05) changes with reductions lightness (L* decreased by 19–24%), redness (a* 52–67%), yellowness (b* 15–25%). Interestingly, processed carrots showed an increase phenolics (by 25–133%), flavonoids 60–126%), carotenoids levels 16–48%) compared carrots. However, specific compounds notable treatment, including vanillic acid rutin (100% reduction all treatments), α-carotene (up 33.3% baking), zeaxanthin 13-cis-β-carotene 40.7% oven). In addition, significantly increased capacity carrots, as determined DPPH ABTS assays, increases up 2.2-fold 1.6-fold, respectively. The properties were strongly correlated content chlorogenic acid, p-coumaric β-carotene (r = 0.86–0.96).

Pistacia lentiscus L., commonly known as the mastic tree or lentisk, is a woody Mediterranean plant revered for its ecological relevance well extensive ethnobotanical heritage. Historically, fruits and resin of P. have been widely utilized in traditional medicine, underscoring important role local healing practices. Given these properties, this study explored an innovative approach to efficiently extract anthocyanins flavonols from oilcakes utilizing ultrasound-assisted extraction (UAE) alternative conventional solvent extraction. Liquid chromatography-mass spectrometry (LC-MS) high-performance liquid chromatography with diode-array detection (HPLC-DAD) were used identify quantify flavonols, revealing successful eight distinct twenty flavonols. A Fractional Factorial Design (FFD) followed by Box-Behnken design (BBD) applied optimize yield The optimal conditions found be time 15 min 70% ethanol liquid-to-solid ratio 0.012 L g-1, which resulted maximum 19.78 mg g-1 dry Total Flavonol Content over 25.4 Anthocyanin Content. By elucidating extracting flavonol glycosides, opens promising avenues oilcake by-products, supporting sustainable practices, advancing valorization bio-resources health-promoting applications.

Neurodegenerative diseases are a group of that share common features, such as the generation misfolded protein deposits and increased oxidative stress. Among them, amyotrophic lateral sclerosis (ALS), whose pathogenesis is still not entirely clear, complex neurodegenerative disease linked both to gene mutations affecting different proteins, superoxide dismutase 1, Tar DNA binding 43, Chromosome 9 open frame 72, Fused in Sarcoma, altered iron homeostasis, mitochondrial dysfunction, stress, impaired glutamate metabolism. The purpose this review highlight molecular targets ALS ferroptosis. Indeed, many pathways implicated hallmarks ferroptosis, recently discovered type iron-dependent programmed cell death characterized by reactive oxygen species (ROS) lipid peroxidation. Iron accumulation results dysfunction levels ROS, peroxidation, ferroptosis triggers; addition, inhibition Xc− system reduced cystine accumulation, leading excitotoxicity GPx4 synthesis.
