Background/Objectives: Wine pomace is a rich source of bioactive phenolic compounds with potential health benefits. This study aimed to evaluate the antipathogenic and antioxidant properties ethanol ethyl acetate extracts from wine three grape varietals (Tannat, Bonarda, Malbec) explore their as natural alternatives for mitigating bacterial virulence in Pseudomonas aeruginosa. Grape pomace, also known as wine is a by-product of winemaking that has traditionally been discarded. However, recent studies have highlighted its rich nutritional and bioactive potential, positioning it promising resource for various applications in the functional food, pharmaceutical, cosmetic sectors. Hydroalcoholic extracts from Malbec and Torrontés wine pomace (Vitis vinifera L.) originating the high-altitude vineyards of Argentina's Calchaquí Valleys were characterized. Total phenolics, hydroxycinnamic acids, orthodiphenols, anthocyanins, non-flavonoid total flavonoids, flavones/flavonols, flavanones/dihydroflavonols, tannins quanti-fied through spectrophotometric methods, with extract exhibiting higher concentra-tions in most phytochemical groups when compared to Torrontés. HPLC-DAD identified more than 30 phenolic compounds both extracts. displayed superior antiradical ac-tivity (ABTS cation, nitric oxide, superoxide anion radicals), reduction power (iron, copper phosphomolybdenum), hypochlorite scavenging, iron chelating ability, compara-tively The cytotoxicity assessments revealed that affected viability HT29-MTX Caco-2 colon cancer cells by 70% 50%, respectively, at highest tested concentration (1 mg/mL). At same time, did not demonstrate acute toxicity Artemia salina or red blood cell assays 500 µg/mL. Exploiting by-products from the oenological industry to extract antioxidant chemicals is a shared goal that combines need reduce wine sector’s environmental impact with improve availability of these biomolecules, according circular economy approach. Natural deep eutectic solvents (NaDES) have recently captured researchers’ interest as safer and more environmentally friendly alternative traditional due their effectiveness, low toxicity, stability. In this work, we set out investigate several NaDES for extraction phenolic local monovarietal grape pomace resulting different vinification procedures (including both red rosé Negroamaro Primitivo grapes; Susumaniello grapes white Chardonnay, Fiano Malvasia bianca grapes), additional generalizing use organisms selected wide plant biodiversity. Three binary choline chloride-based (DES-Lac, DES-Tar, DES-Gly, lactic acid, tartaric glycerol hydrogen bond donors, respectively) were compared ethanol conventional solvent, extracts evaluated using HPLC/MS colorimetric techniques. The results revealed each produces substantially higher total yield than (up 127.8 mg/g DW pomace). DES-Lac DES-Tar effective anthocyanins extraction; most abundant compound was malvidin 3-O-glucoside (highest pomace: 29.4 DW). Regarding compounds, DES-Gly producing comparable ethanol. Unexpectedly, Chardonnay has greatest content astilbin. cases, obtained by provided maximum yield. As result, emerged viable organic solvent techniques, allowing (or equal) yields while significantly lowering costs, hazards, impact.

Vitis vinifera is a plant known since ancient times mainly for the interest of its fruits. However, leaves have traditionally been consumed as food in some regions Mediterranean basin and medicinal remedy.
