Melatonin, an endogenous indolamine derived from tryptophan, is primarily synthesized by the pineal gland in mammals and regulated a complex neural system. Its release follows circadian rhythm, which crucial for regulating physiological processes response to light-dark cycles both humans animals. In this review, we report that presence of hormone bovine milk, with significant differences concentration between daytime nighttime milking, has increased interest milk as natural source bioactive molecules.
