Grape pomace (GP) is a by-product of food industry production rich in polyphenols which beneficial to the human body. An electrochemical (EC) method was used remove bitterness and astringency tannins grape extract. optimized current 0.15A 1.5 g/L NaCl concentration were chosen tannins. The TTC (total tannin content) decreased by 83% after treatment. A novel grade O/W/O double emulsion delivery system designed with TFE (tannins-free extracts) 1% psyllium husk using low-frequency ultrasound (20kHz). Ultrasound improved stability reduced single droplet size confirmed microscope. added delay lipid oxidation ORAC test. feasibility investigated encapsulating vitamin E (α -tocopherol) omega-3 fatty acids. stable up 30 days.

Double emulsions are widely employed to encapsulate oxygen sensitive compounds. Low-frequency ultrasound (20 kHz) was used design a novel food-grade O/W/O double emulsion delivery system with TFE (tannins-free extracts) and 1% psyllium husk. Three nine distinct formulations were created form single emulsions, respectively. The optimal formulation 81% sunflower oil 19% husk (1% concentration) for emulsion. additional delayed lipid oxidation in the emulsion, as indicated by radical absorbance capacity (ORAC) values. Microstructural evaluation of TEF optical microscopy scanning electron (SEM). showed zeta-potential 23.25(mV) ±3.465. feasibility investigated encapsulating vitamin E (α-tocopherol) omega-3 fatty acids. ORAC values containing or 371.06±15.31 378.32±11.23 μM Trolox/g, respectively, remained stable after 30 days storage.
