Abstract:
Edible
mushrooms
have
been
classified
as
“next-generation
food”
due
to
their
high
nutritional
value
coupled
with
biological
and
functional
potential.
The
most
extensively
studied
reported
mushroom
macromolecules
are
polysaccharides.
However,
macrofungi
proteins
peptides
also
